The famous New York Times blog called NYT Cooking recently published a recipe for the traditional Greek salad known as “horiatiki” made with the core ingredients of tomatoes, cucumbers, peppers, onions and feta with a twist — watermelon.
Watermelon with feta or even in a salad is not entirely uncommon in Greece as many households enjoy the sweet and refreshing summertime fruit with salty feta cheese and cucumbers as a light dinner or snack.

3 cups of watermelon, cubed
2 large ripe tomatoes, cut into slices
1 medium cucumber, sliced
1 small red onion, chopped
⅓ cup of olives
⅓ cup crumbled feta
A little chopped parsley and mint (optional)
Olive oil and red wine vinegar
Salt and pepper to taste
