Ios' Skotyri Cheese Capturing Market

skotyriSkotyri, the traditional soft goat cheese from the island of Ios, which has a spicy flavor and savory aroma of savory, is quickly gaining in popularity among restaurants and in supermarkets across Greece and abroad.
Skotyri has gotten its name from the word askos (goat skin), where it is put in order to mature. It is produced with strict traditional standards in a modern dairy which used to belong to the municipality but has been taken over by a private owner.
The factory, apart from Skotyri, produces sour cheese, and gruyere cheese, mizithra and graviera. “Our card is the short collection and milk of high quality. A cheese dairy must be at a high altitude to produce good products. That’s why we believe that the cheese factory of Ios will stand out in Greek market,” a company official, Nektarios Zacharakis said.
The cheese factory of Ios was established in July 2007 and operated under the “umbrella” of the local cooperative. In 2009 it came under the control of the Municipality of Ios and won several awards before going private.
