Use Greek Fava to Create Budget-friendly Main Dishes (recipes)

fava and mushroom fetaGreek fava – the puree of yellow spilt peas – is a favorite traditional Greek food for the summer. However, this economically friendly and easy to make dish can be more than just an appetizer or complimentary to your meal, it can be an alternative main dish that isn’t traumatic for your wallet! Let’s check out some alternative recipes that you can try out this summer to enjoy Greek fava.
Step 1: Make the Fava
favaFirst off, the basic recipe for fava is the base of any fava-centric meal. It doesn’t take long to make, it is very healthy and is budget-friendly.
Fava

  • 500g yellow split peas (18 ounces)
  • 3 red onions, roughly chopped
  • 2 cloves of garlic, chopped
  • 1 lt warm water (3 and 1/3 cups)
  • juice of 2 lemons
  • 1/3 of a cup olive oil
  • thyme (optional)
  • salt and fresh pepper

1. To Prepare your Fava first rinse the split peas with water several times.
2. Heat a large pot over medium-high heat and add 2-3 tbsps olive oil, the chopped onions, garlic and some fresh thyme (optional) and sauté until the onions start to caramelize and then add the peas and blend.
3. Pour in the warm water and the olive oil, turn the heat down to medium and season well with salt and pepper. Allow to simmer with the lid on for about 40-50 minutes, until the split peas are thick and mushy. Remove any foam that might surface on the water as the peas cook by skimming the water with a slotted spoon.
4. After you have removed the foam and the peas are cooked, pour in the lemon juice and transfer the mixture in food processor. Mix, until the peas become smooth and creamy, like a puree.
Serve the fava with a drizzle of olive oil, a tablespoon of diced onion and some capper or chopped parsley along with lemon wedges.
Step 2: Choose your Alternative Dish
fava and eggSo now that you have the basic recipe, let’s look at some toppers that make this dish an alternative main course.
You can top off your fava with feta cheese, chopped fresh chillies, fried chorizo, mushrooms, veggies, chopped herbs, Greek yogurt, pesto or tahini paste. Also, you can add a fried egg or seafood to the dish.
Be sure to serve your fava plate with a side of pita bread, used to scoop up your meal and complete your Greek cuisine experience. Your only limitation is your imagination!
