Greek Researchers Turn Honey and Other Superfoods into Powder


Greek researchers have perfected a technique which converts honey and other superfoods into powder without destroying their nutritional value.
As explained by Kostas Petrotos, Associate Professor of Agricultural Engineering at the Technical University of Thessaly, this is a high-tech method that uses freeze-drying to remove fruit fluids, thus not destroying either the aromas or the vitamins of the products.

The basic idea of freeze-drying is to completely remove water from food while leaving the basic structure and composition of the material intact.
Freeze-drying has two important benefits: It removes water and keeps food from spoiling for a long period of time and reduces the total weight of the food.
“If we used any other method, we would have retained only about 10 percent of the nutrients. With this method we retain almost 100 percent,” Petrotos said.

“With this method, we can turn all the fruits into powder. However, because the method is costly, it is wiser to use it only with ‘superfoods’ which have high added value,” he added.
Among the superfoods used are chokeberries, bilberries, cranberries, Goji Berries and honey.
